Summer is really here, officially so, this week. One of the
great things about summer is the memories (I date myself here, young
people don't talk of memories, do they?) I can remember great trips
to the north country since I lived downstate, we would come up for
vacations and holidays, often camping around the state, or coming to
Hick's Lake, near here, where family had cabins. Spending time with
cousins, aunts, uncles, and grandparents for a few days were always
exciting. There were all the great stuff of summer vacations
bonfires, motorcycle riding, swimming, (a friendly leech, here and
there) and the spooky-ness of the northwoods at night.
Then I became a mom, and it was even more fun to introduce my
own kids to things like lightning bugs, and watch them play with
their cousins, giggling, laughing and growing up. There was running
alongside the first time two wheel bike as they learned to balance,
and seeing a baby fawn in the woods. Remembering to bring the
mosquito dope, and accidentally dropping a hotdog that the dog
scarfed up in a hurry.
Summer, you just wanted to grab every moment and save it for
The other day I found myself driving my old pickup to the
lake with 3 grandkids in the back on a blanket. Another chance for
making memories, but this time with a new generation. As they
laughed and I drove, tapping on the window when I saw a deer or
turkey for them to observe, It occurred to me that while I won't
forget this fun trip to the lake, they might not either.
We arrived at the lake, and it wasn't long before shoes were
coming off and we were cooling our toes in the lake. The kids
decided to take a swim in their clothes, since they hadn't brought
their suits along. It was all great fun, with even the dog getting
in on the action.
What kind of fun will you have this summer? Who will you
make memories with? It almost always takes an extra bit of effort to
make a memory. Don't let summer slip through your fingers. Have
a "Summer is Here!" party and take the kids to the beach. Even
having a cookout on a normal weekday can put just a bit more fun in
your summer. Wake up each morning and think how you can make the day

Simple Summer Strawberry Shortcake!
One thing that might happens on a hot summer day is when we have
strawberry shortcake for dinner! I can remember my mom doing that
and it was so much fun. No vegetables! No meat! I can remember the
giggles thinking it seemed so funny for my mom to make dessert for
dinner. But it was so good!
Here's my recipe for strawberry shortcake and you might like it, too.
1/3 c. margarine or butter
1 ½ t baking powder
½ t salt
2 1/4 c flour
¾ c milk
Mix margarine or butter with dry ingredients with a fork. Add milk
and mix as little as possible to blend. Mixture should be just barely
sticky. Using a little flour, pat out to about 3/8 or ½ inch
thinkness on a baking stone. Using a biscuit cutter, cut, and place
one on top of another to make them nice and high. Bake @ 450` for 12-
14 minutes until slightly brown. Cool, or use warm (that's how I
like it) break biscuit open in a bowl. Scoop some sugared berries
over, and top with a couple scoops of ice cream. Add more berries
and whipped topping of your choice.
