      Slow Cooker Corn Spoonbread - 27g Carbohydrate; 2g Dietary Fiber

      Amount Measure Ingredient -- Preparation Method

      3 cups milk -- whole or low-fat
      1/2 cup yellow cornmeal -- medium-ground
      1 1/4 teaspoons salt
      1/4 cup unsalted butter -- (1/2 stick), cut into pieces
      2 cups fresh corn kernels -- yellow or white, or frozen petit corn, thawed
      1 teaspoon hot pepper sauce -- such as Tabasco
      1 tablespoon baking powder
      6 large eggs
      1 cup shredded cheddar cheese -- about 4 oz

      Place the milk, cornmeal, and salt in a large saucepan. Whisking constantly to prevent lumps, heat to boiling. Reduce the heat to a simmer and cook for 1 minute, until thickened. Stir in butter until melted, then stir in the corn and hot pepper sauce. Sprinkle with the baking powder and whisk in the eggs until completely smooth. Fold in the cheese.

      Spray the inside of the crock with a nonstick vegetable cooking spray. Pour in the spoonbread batter. Cover and cook on HIGH for 3 to 3 1/2 hours, until the spoonbread looks set, but is not quite firm. Serve immediately.

      Serves 6

The cooked cornmeal mush is called "batter bread" as well as spoonbread and may contain cooked rice, hominy, different cheeses, and vegetables, as in this recipe. Scoop this piping hot right out of the cooker onto plates."
