      Asian Chicken Broth - 4 pts, 2g Carbohydrate; trace Dietary Fiber

      3 pounds chicken wings -- chopped in half
      5 slices fresh ginger -- 1/2-inch thick
      1 bunch green onions -- green tops trimmed
      1/2 teaspoon black peppercorns -- whole
      6 cups water -- or enough to cover
      salt -- to taste

      Place the chicken wings, ginger, green onions, and peppercorns in the slow cooker. Add water to cover by 2 to 3 inches. Cover and cook on High for 1 hour. Uncover and skim off the foam from the surface. Cover, reduce the heat setting to Low, and cook for 8 to 10 hours. If the water cooks down below the level of the ingredients, add a bit more boiling water.

      Uncover, turn off the cooker, and let the broth cool to lukewarm. Set a large colander lined with cheesecloth or a fine-mesh strainer over a large bowl and pour the broth through to strain. Press down on the vegetables and chicken to extract all the liquid. Discard the vegetables, skin, and bones. Taste the broth and leave unsalted or add salt if desired. The broth is ready to use and can be refrigerated for up to 2 days. The fat will separate and rise to the top; scoop off with a spoon and discard. Or divide among airtight freezer storage containers, leaving 2 inches at the top to allow for expansion, and freeze for up to 4 months.

      Makes about 6 cups (12 one-half cup servings)
