      Slow Cooker Smoked Turkey and Lentil Soup

      Amount Measure Ingredient -- Preparation Method
      -------- ------------ --------------------------------
      1 pound smoked turkey drumstick
      2 carrots -- sliced
      1 leek -- well rinsed and chopped (white part only)
      1 celery stalk -- diced
      1 cup green lentils -- rinsed & picked over
      1 bay leaf
      1/2 teaspoon salt
      1/4 teaspoon pepper
      1/2 teaspoon cayenne
      6 cups water

      Lentilles Vert le Puy are grown in the Auvergne Region of France and well known for their color and rich texture. Serves 8.

      1. Place all the ingredients in the crockpot/slow cooker.

      2. Cook on low 8-10 hours; high 4-5 hours.

      3. Discard the bay leaf. Remove the meat from the turkey leg and discard the bone.

      To serve: Stir the turkey meat back into the soup and serve with a sliced baguette and a green salad.
