      LEMON SQUARES

      Yield: 80 squares


      INGREDIENTS

      - 1 cup margarine
      - 1/2 cup sugar substitute
      - 1/2 teaspoon salt substitute
      - 1 egg
      - 1 egg yolk
      - 2 tablespoons fresh lemon juice
      - 1 teaspoon vanilla extract
      - 4 cups flour

      DIRECTIONS

      Combine the margarine, sugar substitute and salt substitute
      together in a large bowl. Beat until light and fluffy. Add the
      egg, the egg yolk, lemon juice and vanilla extract. Beat until
      well blended. Then gradually add the flour. Beat until mixed.

      Remove the dough from the bowl and form into 2 large balls.
      Wrap each large ball in plastic wrap. Place the wrapped balls
      in the refrigerator for 4 hours.

      Preheat oven to 350 degrees F. Use a greased baking sheet
      or a baking sheet with a nonstick surface.

      Remove the dough from the refrigerator. On a lightly floured
      surface roll out each ball to 1/8-inch thickness. Using a
      sharp knife cut into 1" squares or use cookie cutters of
      this size. Place each cookie on the baking sheet 1" apart.
      Bake for 10 minutes. The edges should be a light brown.
      Remove from oven and place on racks to cool.

        CAESAR SALAD WITH BABY SHRIMP

        INGREDIENTS

        - 2 ounces cooked baby shrimp
        - 1 medium head romaine lettuce, torn into bite-sized pieces
        - 1 tablespoon grated Parmesan cheese
        - 1 cup croutons, preferably homemade

        Dressing Ingredients:

        - 1 egg
        - 1 teaspoon crushed garlic
        - 1 anchovy, minced
        - 4 teaspoons lemon juice
        - 1 tablespoon red wine vinegar
        - 1 teaspoon Dijon mustard
        - 1 tablespoon grated Parmesan cheese
        - 2 tablespoons olive oil

        DIRECTIONS

        In large bowl, place shrimp, lettuce, cheese and croutons.

        Dressing: In small bowl, combine egg, garlic, anchovy, lemon
        juice, vinegar, mustard and cheese; gradually whisk in oil
        until combined. Pour over salad and toss to coat.

          INGREDIENTS

          - 1 pound ground skinless turkey breast
          - 1 pound lean ground beef
          - 1/2 medium onion, minced
          - 1 clove garlic, minced
          - 3 tablespoon minced fresh parsley
          - 1 egg
          - 1/4 cup low-fat (1%) milk
          - 1 teaspoon dry mustard
          - 1/4 teaspoon salt
          - 1/4 teaspoon ground white pepper
          - 1/8 teaspoon nutmeg
          - 2 slices white bread, lightly toasted and
          made into coarse crumbs
          - 2 tablespoons ketchup
          - 2 tablespoons water

          DIRECTIONS

          Preheat the oven to 350 degrees F.

          In a large bowl, combine the meats with your hands or a large
          fork. Blend in the onion, garlic, and parsley; set aside.

          In a medium bowl, whisk the egg until frothy, about 1 minute.
          Add the milk, mustard, salt, pepper, and nutmeg and whisk to
          blend. Add the bread crumbs and let stand for 5 minutes.

          Add the egg mixture to the meat mixture and blend well, about
          1 minute. Spread evenly into a 9x5-inch loaf pan.

          In a small bowl, combine the ketchup and water until blended.
          Spread on top of the meat. Bake until the meat is no longer
          pink, about 90 minutes.

            TROPICAL SALSA


            Yield: 1-1/2 cups

            INGREDIENTS

            - 1/2 cup finely-chopped red onion
            - 2 mangoes (or 2 papaya or 6 nectarines),
            peeled and diced small
            - 2 Tbsp. fresh lime juice, or to taste
            - 1/2 cup finely-minced fresh cilantro leaves
            - 1-2 Tbsp. rice vinegar, or to taste

            DIRECTIONS

            Place chopped onion in a heatproof bowl (e.g. Pyrex) or
            measuring cup and add boiling water to cover. Let stand for
            a few minutes.

            In the meantime, mix fruit and juice in a large bowl. Add
            cilantro and vinegar and mix well.

            Drain onion and add to fruit mixture, mixing well. Taste,
            adding more vinegar and/or juice if desired.

            Salsa may be served immediately or can be stored, covered,
            in the refrigerator 2 to 3 days.

              Yield: 48 2"-square pieces


              INGREDIENTS

              - 3 cups carob
              - 1/4 teaspoon artificial sweetener
              - 1 (14 -ounce) can sweet condensed milk (not evaporated milk)
              - 1 cup chopped walnuts
              - 1-1/2 teaspoon vanilla extract
              - 48 walnut halves

              DIRECTIONS

              In a heavy 2-quart saucepan, combine the carob, artificial
              sweetener and condensed milk. Cook over low heat until carob
              is completely melted. Remove from heat. Add chopped walnuts
              and vanilla extract. Stir until completely mixed. Pour into
              a 9" x 9" square pan. Chill in refrigerator until almost
              firm. Score the top of the fudge into squares 2" x 1/2" deep.
              Place a walnut half on the top of each square. Chill until
              firm. Finish cutting into squares.

                Baked Fish With Lemon & Black Pepper

                0.7g Carb (baked)
                1 pound fish fillets - any
                1/2 teaspoon salt
                1/8 teaspoon turmeric
                1/2 teaspoon cumin powder
                1/2 teaspoon fresh ground black pepper
                1 clove garlic - minced
                1 teaspoon vegetable oil
                1 1/2 teaspoons lemon juice - fresh squeezed

                Place fish fillets into a medium sized bowl and sprinkle with salt, turmeric, cumin, black pepper and garlic, tossing to coat well. Cover and chill for 50 - 60 minutes. Preheat oven to 400 degrees F. Coat the bottom of an 8 x 8 inch baking dish with the vegetable oil. Place the fish in a single layer inside the baking dish, and pour the marinade on top. Bake uncovered for 20-25 minutes. The fish should be firm to the touch. Fish is done when it easily flakes with a fork. Sprinkle with lemon juice 5 minutes before serving.

                    1 medium thinly sliced celery stalk
                    1/2 cup finely chopped onion
                    1/2 cup finely chopped green bell pepper
                    8 ounces chopped tomato
                    1/2 teaspoon dried thyme leaves
                    4 (6 ounce) lean white fish filets; tilapia, snapper
                    or flounder - rinsed and patted dry
                    Paprika to taste
                    2 tablespoons reduced-fat margarine
                    1/4 cup chopped parsley leaves
                    3/4 teaspoon salt
                    1/8 teaspoon hot pepper sauce

                    Saute celery, onion, and bell pepper 4 minutes or until onion is transparent. Add tomatoes and thyme, bring to a boil, reduce heat, cover tightly, and simmer 10 minutes or until the celery is tender crisp. Meanwhile, coat a baking sheet with cooking spray, add fish, sprinkle lightly with paprika, and bake in preheated 400 degree oven for 12 minutes or until fish is opaque in center.                       8 ounces sliced mushrooms
                      1 pound 96% extra lean ground Beef - shaped into 4
                      even patties
                      1/2 cup dry red wine
                      1 teaspoon beef bouillon granules
                      1/2 teaspoon dried oregano leaves
                      1/4 teaspoon black pepper

                      Place a 12-inch nonstick skillet over medium high heat until hot. Coat skillet with cooking spray, add mushrooms, and saute 5 minutes. Remove mushrooms from skillet and set aside on separate plate. Add beef patties to skillet, reduce heat to medium, and cook 4 minutes. Turn and cook 4 minutes longer or until burgers are done to your liking. Meanwhile, in a small bowl, combine remaining ingredients, add mushrooms and any accumulated juices, and set aside. Place beef patties on a serving platter and cover with a sheet of foil to keep warm. Add mushroom mixture to pan residue, increase heat to high, and bring to a boil.                         3 cloves minced garlic cloves
                        1 teaspoon salt
                        2 tablespoons lime juice
                        1 jalapeño pepper - finely chopped
                        2 teaspoons ground cumin
                        2 tablespoons olive oil
                        === BEEF AND FAJITAS ===
                        2 1/2 pounds skirt steak trimmed and cut into large
                        pieces
                        1 tablespoon canola oil
                        1 green bell pepper - cut thin strips
                        1 red bell pepper - cut thin strips
                        1 small red onion thinly sliced
                        12 controlled-carb flour tortillas
                        3/4 cup green salsa
                        3/4 cup sour cream
                        1/4 cup chopped fresh cilantro

                        Make Marinade: In a large bowl or resealable plastic bag, combine garlic, salt, lime juice, jalapeño, cumin and olive oil; whisk together. Add steak pieces to marinade; coat well. Marinate, refrigerated at least 1 hour.

                        Heat oven to 350 degrees. Wrap tortillas in foil; place in oven to warm 15 minutes before serving.

                        Remove steak from marinade; discard marinade. Grill 5 inches over hot coals (or over medium-high heat) 3 to 4 minutes per side for medium-rare doneness; set aside.

                        In a large skillet over medium-high heat, heat canola oil. Cook bell peppers and onion 5 minutes, until vegetables are softened.

                        Slice steak thinly across the grain. To assemble fajitas, spread tortillas with salsa, top with steak slices and vegetable mixture, sour cream, and cilantro. Fold over and serve.

                          - 4 (6-inch) mini-baguettes cut lengthwise
                          - 1 pound roasted vegetable salad, drained
                          - 1/4 cup chopped parsley
                          - 4 (2-oz) slices provolone cheese

                          DIRECTIONS

                          Preheat oven to 350 degrees F.

                          Open each baguette and fill with vegetable salad. Sprinkle
                          on 1/4 of parsley, and lay a slice of provolone cheese over
                          the top. Close sandwich.

                          Place sandwiches on a baking sheet and bake for 5 minutes,
                          until cheese melts.
