That's a great recipe. Thanks. I think I'll try making some for the next event I go to. They'll be perfect and it seems like they'd be good cold as well as hot. Have you ever used refrigerator biscuits for them? I wonder if that would work. I'll try it before I make them for the event.

My favourite byo lunch is a filled biscuit. I usually make a triple batch based on my recipie roll the dough until it's 1/4 in and cut into large circles. I usually make them 2-1/2" or so across. You need them in pairs. Then take some meat. I usually use about two boneless/skinless chicken breasts and cook them in a little oil, salt, pepper and garlic until done. Then chop them into small bits and put 3-4 pieces on each of 1/2 of the biscuits. Top with mushrooms/onions/whatever and a large pile of grated cheese. (Leave just enough room around the edge to seal the top biscuit to the bottom and pile the cheese about an inch or so high, it will melt down quite a bit.) Seal the top biscuit to the bottom brush with butter and cook 10-12 min (however long the biscuit needs)

I also bring hard boiled eggs, cheese, drinks, (Water, juice, and iced tea) and some odds and ends for snacks.
