      Unless you have a priori knowledge that the data should fit
      a particular degree polynomial, fitting a polynomial will
      generally produce a fit inappropriate to the data - too low
      a degree will smooth too much and too large a degree will
      produce large variations.

      Perhaps a spline fit ...
