Great Lenten Recipe
- A great 'high-protein' lenten recipe for fast days. Oil may be
omitted on non-oil days. Onion may be fried in a little margarine,
instead of olive oil........
Πιλάφι με Φακές - Lentil-Rice Pilaf (Emjadara)
1/2 cup Lentils
2 1/2 cups Water, w/ 1/2 tsp. Salt
3/4 cups Rice
1/4 tsp. Cumin, ground
1/8-1/4 tsp. 7 Spice Mix*
1/2 tsp. Garlic powder
1 large Onion, sliced
1/2 cup Olive Oil
Salt and Pepper to taste
Put lentils into a 3qt. sauce
pan with 1/2 tsp. salt, add water, bring to a boil of a few seconds and
then simmer for 20 minutes. Add spices, rice and 3-4 tbl. oil.
Continue simmering, covered, for 20 minutes. Meanwhile, heat oil in
skillet and fry onions until dark brown. Remove onions, set aside. Add
used oil to lentil pilaf, stir gently and cook for 5 more minutes.
Empty into a bib dish, cover with fried onions. Serve hot or cold with
salad or plain yogurt. Yield, 3 cups/servings. (Excellent with hummus
and a tomato-cucumber salad.)
*The traditional “7 Spice Mix” one finds in Middle Eastern grocery stores.
