      Vegetarian «Chile con Soya»
      Vegetarian Chili
      1 lb. hydrated «Worthington Gran Burger» (Textured Soy Protein)
      1 Med.-Lg. Onion
      2-3 tsp. Minced Garlic
      15 oz. can Stewed Tomatoes
      8 oz. can Tomato Sauce
      16 oz. can «Bush’s Chili Magic», (Medium, Chili Starter)
      Olive Oil
      Salt to taste

      Hydrate Gran Burger according to directions, making approximately one
      pound. Chop onion and sauté in olive oil in large pot. When onion is
      almost done add garlic and continue sauteing. Lower heat and add
      remaining ingredients. Stir well, and simmer, covered, on low heat for
      at least 30 minutes. (Worthington & Bush’s have the best flavor, don’t
      substitute. Bush's is a brand of beans that are cooked with 'chili'
      spices, used as a 'starter' for making chili.)

      Σπανακόρυζο - Spinach Rice
      Greek Spinach Rice
      1 lb. Spinach, canned
      1 lg. Onion, chopped
      ¼ cup Olive Oil
      1½ cups Water
      4 tbl. Tomato Sauce
      ⅔ cup Rice
      1 tbl. Dill
      Salt and Pepper to taste

      Drain spinach, saving juice. Sauté onions in olive oil. Place spinach
      juice in a measuring cup and add enough water to equal 1½ cups liquid.
      Add this and all remaining ingredients to pot, cover and simmer for 20
      mins. Serve with wedges of lemon and fresh bread. (A great main course
      during fasts.)

      TABOULEH
      1 cup Bulgur (Cracked) Wheat
      1 cup Boiling Water
      ¼ cup Olive Oil
      ¼ cup Lemon Juice
      3 tsp. Salt
      2 tsp. Minced Garlic
      ½ tsp. Oregano and Mint, each
      1 dash Cayenne Pepper
      1 bunch Scallions, chopped fine
      1 bunch Fresh Parsley, chopped fine
      1 bunch Fresh Cilantro, chopped fine
      1 lg. Tomato, chopped
      1 cup Kalamata Olives, pitted & chopped (optional)

      Blend wheat and boiling water. Cover and let sit for 30 minutes. Mix
      oil, lemon juice and spices, beat well. Mix wheat and vegetables, add
      dressing, toss well. Chill before serving.
