      Tom - your problem is with using the campden tablet. This will kill
      any yeasts & bugs present, ie it won't make it ferment. You can go
      three ways with it
      * don't add campden tablets, and let what-ever wild yeasts etc are
      present take off (pretty risky, don't know what you'll end up with,
      could take forever) (don't do it)
      * add campden tablets, give it a day or so for the sterilizing gases
      to dissipate, then add a good yeast (eg one for wine-making or
      distilling)(safe & reliable)
      * just add a good yeast, and hope it dominates anything else that is
      present (fairly good bet)
