- The Alcohol Texbook, 5th Editon edited by W.M. Ingledew is my suggestion. It is expensive but comprehensive and is given to attendees at the Ethanol Technology Institutes' Alcohol School.It has separate chapters on:Yeast biology, monitoring and identificationYeasts: Physiology, nutrition and ethanol productionYeast stress in the fermentation processCommercial yeast production for the fuel ethanol and distilled beverage industriesYeast propagationI'm sure that you can get used copies on Amazon or eBay for a fraction of the cost and I even seen digitized sections on the internet. A great resource for anyone wanting to dig deep. Just Google it.
