      Master William,
The trick with carving a coarse grained wood like oak is to size the design of your carving to fit the grain. Some amazingly detailed stuff has been done in ivory which has extremely close grain. Oak, on the other hand requires a large motif, both to support the carving and to show the grain to advantage.

If you want to see some incredible carving, try the Werther's (sp?) Museum in Ohio. The man was incredible. They're still selling off pieces of ivory he had stockpiled when he died 50 years ago. He not only carved some incredible stuff, most of it was articulated. One piece is a rendering of a steam powered saw mill complete with workers that when turned on all of the crew members look like they're operating the various tools in the mill. It is VERY impressive.
