      OTTAWA — An Ottawa man is making the world a little bit sweeter for
      vegetarians and vegans by creating a marshmallow free of animal
      products.

      Fluffy, sugary marshmallows conjure nostalgia for James Bain, an
      Ottawa IT consultant and the maker of Charmallows.

      “We all have memories of campfires and rice crisp treats, and
      marshmallows were kind of a part of that,” he explains.

      But traditional marshmallows contain gelatin, a gelling agent that
      comes from boiling animal by-products, so the ability to create
      memories of s’mores and sticky baking is hindered for some people with
      dietary restrictions.

      Bain says he’s been interested in food science since childhood,
      creating all kinds of culinary concoctions. His reputation as a “food
      tinkerer” led to a family friend’s asking him to try his hand at a
      marshmallow free of animal products for the bakery Auntie Loo’s
      Treats.
