      RED BANK — Adam Sobel's idea to bring vegan food to the masses has run
      into several obstacles.

      First, there's the requirement of getting up each day at 3 a.m. to
      make pastries. Then there's the need to stick to a strict list of
      ingredients for his menu. Then there's climbing into his mobile
      kitchen, driving two hours to Hoboken and finding a parking spot where
      he can operate hassle-free.

      Yet to hear Sobel tell it, there's nothing else he wants to do.
      "There's not a single day where the alarm goes off and I dread getting
      up," he said. "It doesn't feel like work. It's like some fun adventure
      I'm on every day."

      Sobel, 28, owns the Cinnamon Snail, a mobile business based in Red
      Bank that sells gourmet vegan food, free of any animal-based products.
      He is building a loyal following by whipping up items such as maple
      mustard tempeh sandwiches and Creole grilled tofu subs and Korean
      barbecue seitan, open faced on grilled tortillas.
