      It's rennet (without the final r). It's an animal product, so there is a lot of kashrut issues. For example, At one time the Mars bars, made with beef rennet through out the world, were switched in the UK to pig rennet (it's a lot cheaper and more available). The Moslems in the UK made such a stink the move was reversed after two weeks.

      You can use lemon juice to curdle the milk instead, I have seen recipes a long time ago for using it in vegetarian cheese.
