Healthy Homemade Granola

3 cups rolled oats
1 cup nuts of choice (slivered almonds, chopped walnuts)
3 T. chia seeds
¼ cup flaxseed
¼ cup dark brown sugar
¼ cup honey
¼ cup oil
½ teaspoon salt
1 tablespoon cinnamon
1 tablespoon vanilla extract
1 cup dried fruit (raisins, craisins, dried apples, apricots)
Preheat oven to 375 F. In a large bowl, combine oats, nuts, flaxseed and chia seeds.
In a small pot slowly heat brown sugar, honey, oil, salt, cinnamon and vanilla together. Heat until sugar is dissolved.
Lay granola on a large sheet pan. Sprinkle with a little water (¼ cup) and smush handfuls with your hands. Pour over oat mixture and mix well.
Bake for 20 minutes, stirring halfway through. Remove from oven and add dried fruit. Bake for 5 minutes. After Granola is cooled off and completely dry, store in an airtight container. ENJOY!
