      I know this is a bit out of season but this was just sent to me in a newsletter so I figured I'd send it out.  It comes from a newsletter put out by Kevin Trudeau who puts out books regarding Natural Cures the government doesn't want you to know about.
       
      Tangy Fresh Green Bean Salad
       
      6 C                 fresh green beans, cut into 2-inch pieces
      2 med-lg         firm tomatoes, cut into bite-sized chunks
      1/4 C              red onions, thinly sliced
      1/2 C              sheep or goats milk firm, feta cheese, cut into 1/4 inch squares
      2-3 T              balsamic vinegar
      4-5 T              extra virgin olive oil
                             sea salt and fresh ground pepper, to taste 
       
      Steam green beans for 1-3 minutes, just until the color brightens; strain.  Transfer to large bowl and toss with sliced onions, tomatoes, olive oil, vinegar, salt and pepper.  Add the feta chunks and serve at room temperature or chilled.
