with Martha, since her recent HCM diagnosis,
they tell me not to let her get stressed out. And yet just going to
visit them stresses her to no end. The possibility of it killing her has
weighed heavily on my mind.

My cat gets very stressed out at the vets (and they are wonderful and gentle with him!). The last time I took him (for his annual exam right after his HCM diagnosis) his resting respiration rate increased significantly from his norm and we had to give him an extra Lasix that evening.
He goes tomorrow morning for blood tests to check his kidney function since his Lasix frequency was changed from once a day to twice a day 10 days ago. It will be a tense couple of days, worrying about a worsening in his condition. We plan on keeping vet visits to an absolute minimum to keep our baby Z stress free!
