- If you want crisp skin, you can use a propane torch to finish giving the bird a nice crisp skin at the end. Or since that is where most of the fat is, we just scrap it off and toss it anyways.

>Ok, Joe's ears are burning right now and he may kill me for evenI did a 22 pounder last Thanksgiving. As has been mentioned, the skin doesn't brown very easily, but WOW is it a tender and juicy bird. And that 22lbs was cooked thoroughly in only a little over 2 hours. I have 2 UTR's - we have a big family.

One drawback is you can't stuff the bird, but my wife doesn't like cooking her stuffing inside the bird anyway. Which makes me wonder, if you don't stuff it, can you really call it stuffing?
Speaking of good deals, I was in Costco yesterday and noticed they had the 'last one' of the CampChef 3-burner stoves with the griddle, usually about $200, marked down to $130. I obviously bought it, now I have to figure out the best way to hide it until Christmas ;-)

- I'm going to try out my new Ultimate Turkey Roaster today. I need to make sure I know how to use it before I do a turkey for the family on Thanksgiving. Wish me luck!
