      Enchilada Red Sauce

      This red sauce works great saucing enchiladas



      3 tbl cooking oil
      2 tbl white flour
      1/2 tsp cumin powder
      1/2 tsp Mexican Oregano
      1 tbl dried onion flakes
      2 tsp high grade garlic salt (Lawry's)
      1 tbl paprika
      4 to 5 tbl high grade chili powder ( should not have corn or wheat
      flour in it)



      2 15 oz can tomato sauce
      2 cans of water (30oz)


      In sauce pan, heat oil on low flame, and add flour, and make a
      white roux (do not brown)

      Add all the dry spices and mix well

      Add tomato sauce and water-whisk well again


      Bring everything to a low simmer, if this sauce gets too thick add
      some more water-simmer about 1/2 hour total. remove from fire and
      cool.

      This sauce is used to for making enchiladas, makes about 2 quarts
      sauce.
