      I sincerely believe in the low pressure effect of the proper fitting cast iron lid on a cast iron pot.
      In fact, I pretty much proved it with out trying. My sister made 2 layer cakes. One in her kitchen oven and a second under my supervison in the camp DO's.
      The second was more moist. Not by me observation but hers. That's all the proof I needed.

      These are great links.  Still I am wondering if the DO acts a bit like a low pressure cooker.  You would only need a little pressure build up inside the oven to make it "sea level" or at least under 3000 feet.
