450g cooking apples
½ glass, dry cider
25g Caster sugar
50g unsalted butter
Freshly ground black pepper
Method
Peel and core the apples.
Chop roughly and place in a saucepan with the cider, sugar and butter.
Put a tight fitting lid on the pan and cook slowly till pureed – approximately 10-15 minutes.
Season with the pepper. Pass through a sieve or liquidiser. Reheat and serve with the royal roast or turkey.
