The closing of Parisian Bakery is such a tragic story. They had sourdough almost as old as the city, defining the unique and delectable flavor of San Francisco sourdough. Parisian was bought out by Interstate Bakeries, who then closed it down. They have refused to comment on the fate of Parisian's sourdough.

I'd always entertained some hope that Parisian Bakery would somehow be resurrected—an extremely unlikely outcome. I suppose it's better to raze the building and build something productive in its place.

and today i got notice of environmental review for a new SFPD forensics lab and traffic company at 1995 evans, the old Parisian bakery.  they want to demo the existing building and build a new 4-story 128K SF builidng and 47K SF parking garage. This is a great location for them!
