        A ten- or twelve-pound turkey. Split down back, remove breast bone so
        it can flatten out like a thick steak. A deep bed of coals. A bowl of
        melted butter, a little chopped garlic and parsley. Broil like a
        steak over coals. Baste liberally with melted butter, garlic and
        parsley. Keep a bowl of water at hand. When flames spring up,
        sprinkle water (don't splash) on flames. By sprinkling lightly you
        create little steam cloudsm -- About forty-five minutes of this
        alternate steaming and broiling with frequent turnings will give you
        a broiled fowl that tastes the way pheasant is supposed to taste and
        often doesn't. Important. A good deep bed of coals; intelligence in
        sprinkling water lightly; patience in turning and broiling.

          I am afraid that my turkey or should I say 35 turkeys are going to be better
          than keith's. We have marinated them in our secret rub and we started them 6
          at a time on the Rotisserie over a hot Kiawe wood fire. We will be feeding
          about 1200 + at the Ka'anapali Beach Hotel's Thanksgiving feasts and shows.
          Meanwhile at the Old Wailuku Inn where I will return after the Frenzy of the
          hotel we are enjoying a quiet thanksgiving day.

My turkey's a cookin already...I'd forgot about DB loving his turkey...good start to the Holiday Keith....happy holidays to all. hmmmmm maybe I'll eat my dinner off of my aquarium plates...hmmm...might enhance my turkey a bit to do that...smile...tj
