      Put the <table> in a <table-and-caption> and use text-align="center" on the
      <table-and-caption>. You will probably want to "turn off" the alignment at
      some point before your table's content, or your whole content will be centred.

      If you are using a processor that doesn't support the above, nest your
      table inside of another table where the <table-column> column-width= value
      is absent for the centre column and is proportional-column-width(1) for the
      outside columns.
