      Ever been on an Irish highway?
      You see, you see!
      But seriously folks, these cookies are to honor Saint Tor having
      driven all the snakes from New Zealand, all the elephants from
      Ireland AND all the lions and tigers and bears from Hawaii; well…..I
      did those thingys 100% as much as Saint Patty drove all the
      reptilians from any isle, ever, verily!

      Another of one of the many thingys moi hast done, 100%, did do.

      Enough levity, now let's leaven some dough.

      Ingredients:
      ½ cup margarine
      ½ cup butter
      ¾ cup brown sugar (packed)
      1/4 cup sugar
      2 eggs
      2 teaspoons vanilla
      2 1/3 cups flour
      ½ teaspoon baking powder
      ½ teaspoon baking soda
      5 ounces white chocolate baking chips
      1 3.9 ounce box pistachio pudding (instant, with sugar)
      ½ teaspoon black pepper
      ½ teaspoon ginger
      pinch of ground cloves
      1/3 cup finely chopped or grated walnuts
      1 tablespoon green food coloring

      1. Preheat the over to 325 degrees
      2. Place the sugars and margarine/butter in a `large' bowl allow the
      marg/butt to soften.
      This can be facilitated by carefully setting the bowl on top of the
      preheating oven.
      When soft, beat unto a creamy texture is achieved.
      3. In a bowl sift together the flour, pudding, pepper and spices.
      If you don't have a `sifter' just use a strainer; put the stuff in
      and lightly bang it on the bowl's side or use your hand, somewhat as
      a tambourine.
      Of course the pistachio bits will not go though the strainer so just
      dump those in.
      4. In a separate bowl beat the eggs, vanilla and green food coloring.
      5. Pour the eggs into the bowl containing the marg/butt mixture,
      blend well.
      6. Add the walnuts and dry ingredients, as before…mix well.
      7. Add the chips, mix.

      Allow the batter to sit uncovered for half an hour.

      Run a sink, or container in the sink, of warn soapy water; you'll
      want to wash your hands after each cookie sheet rolling.

      Roll into approximately 1 inch diameter balls, place on un-greased
      cookie sheet and bake for 10 to 12 minutes.

      When they are brown around the bottom edge take the sheet from the
      oven and allow to sit for five minutes, remove from sheet, cool and
      eat.

      Moi `t'will recommend a cup of rooibos to enhance this fantastically
      delightful experience.
