Hi Old Pro...
My husband and I just had some Spam this past week. My Aunt
Katherine Cerveny used to make this as a quick evening supper:
Put several slices of bread under the broiler until top is lightly
brown. Turn bread over and spread Mayo on the the soft unbrowned
side. Add a slice of cheese over the Mayo then a slice of Spam.
(Lay the Spam crossways over the cheese). Put back under the broiler
until cheese is melted and bubbly. Careful not to burn. Even the
grandkids like this.
My husband also likes to brown Spam and have it for breakfast with
eggs. It's OK, but not my favorite.
