      New Year Nut Roast
      Happy New Year! Kick off 2009 with some hearty, nutritionally sound home cookin’. This nut roast is a satisfying main dish for a special occasion or any meal. Loaded with nuts, mushrooms, and oats, and seasoned with garlic, oregano, and cilantro, it’s as delicious to eat as it is nutritious. Nuts pack added protein and provide a good source of unsaturated fats, fiber, and micronutrients.

      2 Tbs. olive oil
      1 large onion, chopped
      3 cloves garlic, chopped
      1 large carrot, grated
      3 ½ - 4 cups fresh mushrooms, chopped
      1/2 cup cilantro, chopped
      1 ¾ cups cashews
      1 ½ cups Brazil nuts
      2 slices wholegrain bread, torn into bite-sized pieces
      ¼ cup ground flaxseeds
      ½ cup old-fashioned (not quick) rolled oats
      1 Tbs. soy sauce
      ¼ - ½ cup hearty red wine or vegetable broth
      1 tsp. dried oregano
      ½ tsp. dried thyme
      salt & pepper (to taste)

      Heat oil in frying pan; add onion, garlic, carrot, mushrooms; sauté until onions are soft and brown (about 10 minutes); add cilantro, mix and turn off heat.
      Place nuts, bread, flax and oats in a food processor and blend until ground to uniform texture (like coarse meal); add herbs and pulse to combine.
      Measure 1 ½ cups of the veggie mixture and 1 ½ cups of the crumb mixture and set aside in a large bowl.
      Add remaining mixture in frying pan to crumbs in food processor, and add soy sauce and red wine; process until smooth.
      Scrape the mixture into the bowl with the vegetables and other crumbs; combine until ingredients resemble sticky and thick “dough.”
      Place mixture into lightly greased loaf pan; smooth the top and bake at 350 F for one hour, until top is dry and edges are browned. Serve with your favorite gravy. Makes 8 servings.

      Nuts for Health
      Older adults at high risk of heart disease are more likely to reverse their symptoms of metabolic syndrome by eating 2 tablespoons of mixed nuts each day and a Mediterranean diet, according to a recent Spanish study. Metabolic syndrome is a condition characterized by health problems such as abdominal obesity, high blood pressure, high cholesterol, and glucose intolerance. It is also a risk factor for coronary heart disease and type 2 diabetes.
      The one-year study examined 1,224 participants, aged 55 to 80, at high risk for cardiovascular disease, with more than 60 percent meeting the criteria for metabolic syndrome. Among the participants who already had metabolic syndrome, those given personalized advice on the Mediterranean diet and 2 tablespoons of mixed nuts (1/2 walnuts, 1/4 almonds, and 1/4 hazelnuts) were 70% more likely to have reversal of metabolic syndrome than those in the control group.
      The typical Mediterranean diet includes an abundance of fruits, vegetables, legumes, whole grains, pasta, cereals, nuts, seeds and olive oil, and emphasizes minimally processed, fresh foods. Nuts contain beneficial nutrients, including fiber, arginine, potassium, calcium and magnesium, and a high level of unsaturated fats similar to olive oil.
