Damian, the way I make dried sprouted nuts is as follows:
Soak the nuts in adequate water (at least twice as much water) for 12 hours. Rinse well, then with the nuts in a jar with a sprouting top (mine are plastic, and available at places like Rainbow) tilted downard in a bowl, let the nuts sprout for 8 to 12 hours, rinsing intermittenly. You could also hang in a mesh/muslin/cloth bag. Some nuts won't get a little sprout at the end, but that is ok.
Then I dehydrate the nuts. If desired, you can season them with herbs, salt, pepper etc.. before dehydrating.
