A side note for you on that question. "Allowable" - certainly. As long as you are creating the item for wearing, and not entering it into an A&S competition, no one should ever give you grief if you chose to knit the hat. As long as this pleases you, and you are making a reasonable attempt at staying in-period in your garb, by all means - knit away! :)
(Now for anything you want to be critiqued for A&S though, of course, construction techniques proven from history would be necessary....:)
