I have buckets of unhilted blades in my shop from the days when I
made knives and swords for a living. Lately I have been finishing
batches of these. My plan is to upload photos of them to my crossbow
parts site for sale to re-enactors. To date I have made mostly
rondel daggers and seax of various sizes. What other knife types
would be good? Baselards, hauswehr, ballock daggers? What about
      short swords?

You just gave me an interesting idea.  I can do an archer's short sword with a cloisonne enameled marshal's badge inset into the pommel, grip, or scabbard.  There could also be a place to insert the owner's personal arms.  I'll have to consider making one.

Are you able to fabricate a variety of cross sections of the blade as well...or are they all relatively flat?

I can definitely fabricate short swords.  Although the hilting costs are the same, they are actually a bit cheaper to make since there is less grinding and polishing involved.  The polishing of the blade is the time consuming part of the process.
