      I wonder if it makes a difference I do 2 over 1 with #5's. Today I used a #5 and with a sport yarn and still after making the brim I did the 2 over 1. Very warm.

      I use 1 over 2 when working with the thinner yarns than #6.  Even some #5s (chunky not bulky) is not dense enough for my liking.  May take a bit longer but it is a closer-knit fabric.
