      There's an interesting article on Oncom at

      (linked at from the Oncom article on Wikipedia). It's a scientific
      project with the aim of producing high quality oncom. Haven't fully
      read it yet, but i see they investigate which organisms play important
      roles in oncom production and they test different strains to select
      the ones that produce best oncom. Interestingly, one type of organisms
      that's considered a side-organism (a harmless "contamination") for
      oncom production, the Mucor sp. moulds, which are used in making sufu,
      was tried on its own and found to make good oncom.
