     Produced from estate-grown, hand-harvested grapes, this Cava was bottled using yeast from the Oenologist Institute of Champagne. Second fermentation commenced in bottle, which took three months at 57 degrees F. The wine is aged in the bottle for at least 16 months before disgorging and is disgorged several times per year, so length of time on yeast varies. All bottles are marked with a disgorgement date on the back label.
     Dosage added (8.5 gm/liter). Total residual sugar: 9.9 gm/liter.
     
    Las Colinas del Ebro Garnacha Blanca 2007

    The wine is made from 100 year old Garnacha Blanca vines grown in Terra Alta. Fruit was hand harvested, de-stemmed and lightly crushed prior to pressing. The must was cold-settled and a portion of must that had been macerated with the skins for 12 hours was added prior to fermentation for additional complexity. The wine was aged on its lees in stainless tank for 2 months after fermentation.





    Las Colinas del Ebro Rosado Syrah Garnacha 2007

    After harvest near the end of September, each varietal saw maceration on skins for 15 hours in temperature controlled tanks. Both varietals were macerated separately, followed by bleeding of the must into fermentation tanks where the musts are blended and fermented at 62 degrees for 10 days.

    Vina Honda Monastrell 2007

    This family estate was founded in 1925 and is now owned by Silvano Garcia, one of the youngest winemaker in Jumilla. Grapes come from 25-30 year old vines that yield less than 2 kilos per plant. Harvest was conducted over the first weeks of October. The monastrell is fermented in a traditional manner in temperature controlled stainless steel tanks and skins macerate for between 9 to 10 days depending on the lot. Gentle pump overs and a pneumatic press were used to minimize harsh tannins. This wine was not aged in oak barrels



    Luna Beberide Mencia 2007

    The grapes come from vineyards, oriented south, planted in calcareous clay at 750 meters above sea level, with an average age of the vines of 20 years old. Harvested by hand the first week of October with yields between 25 to 30 hectoliters/hectare. Fermented in stainless steel vats and bottled unfiltered.

    Grapes: 90% Tinta del Pais (Tempranillo), 10% Garnacha and Graciano
    Vintage: 2006
    Color: Red

    This wine comes from vines grown from a number of small villages in the heart of Ribera del Duero; La Vid, Castrillo de la Vega, Aranda de Duero, Campillo de Aranda and Hoyales de Roa. None of the plots are subjected to anti-fungal treatments of any kind. Winemaker, Migel Angel Peñalba fashioned this wine from 60 year old vine Tinta del Pais, from small yields of less than 20 hectoliters/hectare. There are also small amounts of Garnacha, for added floral tones and Graciano for additional acidity. He notes that the vintage progressed rapidly with a warm summer leading to a relatively early harvest. He pushes for later harvests than some other producers looking for ripe phenolics in grapes skins, minimized herbaceous tones and properly ripened pips.

    The wine proceeded with alcoholic fermentation in two separate batches in stainless steel with temperature control. One lot used indigenous yeasts and the other was inoculated with yeast selected for high expression wines. Following completion of alcoholic fermentation the 2 lots were blended and racked to French oak barrels for malolactic fermentation, which lasted until March 2007. 50% of barrels are new and 50% are 1 year old, they come from 4 forests; Tronçais, Fontainebleau, Vosgues and Compieigne. The wine was aged for 12 months in French oak prior to bottling.
