      WATERCRESS AND GRILLED CHICKEN SALAD WITH MANGOES AND GRAPES

      INGREDIENTS:

      The Dressing
      -- 2 tablespoons curry powder
      -- 3/4 cup olive oil
      -- 4 tablespoons red wine vinegar
      -- 3 tablespoons fresh lime juice
      -- 2 teaspoons minced chile pepper
      -- Salt and pepper to taste

      The Salad

      -- 4 boneless, skinless chicken breasts, about 6 ounces each
      -- Salt and pepper to taste
      -- 1 bunch watercress, trimmed, washed and dried
      -- 2 mangoes, peeled, pitted and cut in large dice
      -- 1/2 cup seedless green grapes, halved
      -- 1 red bell pepper, seeded and cut in large dice

      INSTRUCTIONS: Prepare a medium-hot fire in your grill. Combine curry
      powder, oil, vinegar, lime juice, chile, salt and pepper. Set aside.

      Sprinkle chicken with salt and pepper; grill over a medium-hot fire until
      cooked through, 5 to 7 minutes per side. Remove from heat, let cool and
      slice thinly.

      Combine watercress, mangoes, grapes and bell pepper with chicken. Stir
      dressing well and add just enough to moisten the ingredients (there will be
      some dressing left over). Toss well.

      Serves 4.

      PER SERVING: 495 calories, 29 g protein, 26 g carbohydrate, 33 g fat (5 g
      saturated), 68 mg cholesterol, 91 mg sodium, 5 g fiber.
