      >1 pressed garlic clove

      >Cut the rind on several spots on the ham so it doesn't "cup" while cooking.
      >Mix water and spices in a saucepan and heat it without boiling. Add oil and

      >Cover the ham with the spicy oil, put it in a roasting pan and cover with
      >aluminum foil. Leave in a cold place for 24 hours. Let the meat be
      >room-tempered before draining it on a piece of paper. Grill or fry it for
