JACKFRUIT CHEESE CAKE
- JACK FRUIT CHEESE CAKECAKE:120 gm sponge mix2 nos. eggs30 ml water30 gm butter (melted)CHEESE FILLING:250 gm mascarpone cheese50 gm caster sugar2 tsp gelatine powder2 tbsp water150 gm fresh cream,whipped2 tbsp fruit liqueur100 gm canned jack fruit,shreddedMETHOD:1. To make sponge cake,beat sponge mix,eggs & water in a mixer with high speeduntil light & fluffy.Turn into low speed,mix in melted butter until well blended.2. Spread batter into 18cm(7-in) baking tin& bake in preheated oven at 180 degreefor 20 minutes.Remove from oven & coolcompletely.Split into 2 layers.3. To make filling,use wooden spoon to beatmascarpone cheese & sugar until soften &smooth.4. Melt gelatine powder with water over doubleboil.Stir into cheese,then fold in whippedcream & liqueur until well blended.5. To assemble,place a slice of sponge cake intobaking tin.Spread with half of mixture.Place in jack fruit.Then spread with the remainingcheese mixture.Cover & frozen for over night.Garnish as desired..Enjoy cooking,Sorna.
