Knitted fabric is formed by looping one "string" over and over and over.

Woven fabric is several "strings" that are crossed over and through each
      other.

        To use the same source:
        http://en.wikipedia.org/wiki/Knit#Properties_of_knitted_fabrics . It's
loops instead of straight across. Knit fabrics stretch because of the
looping in the fabrics while a standard woven cloth as built-in stability.
