I had drooled over this recipe when I spotted it in my December issue of Canadian Living and dog-eared the page to come back to. And then I got my New Product Launch Kit from Epicure and couldn't believe it!!! Cumin, Coriander, and Cayenne Pepper were part of the new product line for 2011 - perfect timing!! This is on the menu for the weekend!!! Can't wait!!
Preparation time: 5 minutes. Cooking time: 55 minutes. This recipe makes 4 servings
1 1tbsp tbsp(15 mL) (15 mL) paprika
1 1tbsp tbsp(15 mL) (15 mL) granulated sugar
1 1tsp tsp(5 mL) (5 mL) salt
1 1tsp tsp(5 mL) (5 mL) ground cumin
1/2 1/2tsp tsp(2 mL) (2 mL) ground coriander
1/2 1/2tsp tsp(2 mL) (2 mL) cayenne pepper
1/2 1/2tsp tsp(2 mL) (2 mL) dried oregano
3 3lb lb(1.4 kg) (1.4 kg) pork back ribs or pork side ribs
Maple Barbecue Sauce:
1/2 1/2cup cup(125 mL) (125 mL) ketchup
2 2tbsp tbsp(25 mL) (25 mL) cider vinegar
1 1tbsp tbsp(15 mL) (15 mL) maple syrup
1 1tbsp tbsp(15 mL) (15 mL) Worcestershire sauce
1 1tsp tsp(5 mL) (5 mL) chili powder
Combine paprika, sugar, salt, cumin, coriander, cayenne and oregano; rub all over ribs. Place on rack in roasting pan; roast in 425°F (220°C) oven for 45 minutes, turning once. Pour off fat.
Maple Barbecue Sauce: Meanwhile, in saucepan, bring ketchup, vinegar, maple syrup, Worcestershire sauce and chili powder to boil. Reduce heat and simmer, stirring often, for 10 minutes. Brush all over ribs. Roast until sticky, about 10 minutes.
