      Thai Turkey Lettuce Wraps (serving for one)

      6 oz Lean ground turkey
      1/4 cup chopped raw red pepper
      1/4 cup bean sprouts
      1/4 cup onions
      1tsp thai seasoning
      1 tsp minced garlic
      2 tbsp Teriyaki or Yakitori Sauce (make with Teriyake spice or rub)
      4 large leafs iceberg lettuce
      1/4 cup grated carrots

      Spray pan with non fat cooking spray. Cook chopped red peppers and bean
      sprouts for a few minutes. Add ground turkey, onions, garlic and thai
      seasoning. Stir for 5 minutes until turkey is cooked through. Add hoisin
      sauce. Heat for another minute. Place turkey mixture into a lettuce leaf.
      Top with grated carrots. Roll up and enjoy with mandarin oranges on the
      side.
