      Pear Liqueur

      In a large glass container with a lid, combine 3 large pears (cored &
      cut into 10mm wide strips), 2 whole cloves, 2 whole allspice
      (pimento), a 75mm cinnamon stick, 1 cup of sugar and 2 cups of vodka.
      Cover this tightly and shake to blend. Store for 2 weeks in a cool,
      dark place, shaking every other day.
      After 2 weeks, strain the liquid. Bottle and age for 2 weeks.

      Licor de pera (Spanish Pear Liqueur)

      4 ripe pears
      500ml alcohol 40%bv
      300g sugar
      250ml water
      3 sticks cinnamon
      Cut pears and crush. Macerate pulp and cinnamon for 1 week in alcohol.
      Strain. Add sugar syrup. Filter and bottle.

      Grappa alla pera (Italian Pear Brandy)

      1 litre grappa (or neutral alcohol)
      30g sugar (2tbsp)
      1 ripe pear (whole I think)
      Place ingredients in a large glass jar with lid. Macerate ingredients
      in a sunny spot for 7-8 weeks. Filter. Bottle.

      Liqueur de poire (French Pear Liqueur)

      1 large ripe "Williams' pear
      1 litre neutral alcohol 40%bv
      1 glass distilled (clear) pear brandy (eau-de-vie de poire)
      300g sugar
      Place neutral alcohol and the pear in a large glass jar with lid.
      Macerate for 4 weeks in a sunny spot. Add sugar and age for 12 weeks.
      Add distilled pear brandy. Bottle.
