'Liquore Concerto' is a specialty of the Italian Amalfi Coast and
worthwhile for the homedistiller to consider. The recipe is from an
Group 1 ingredients:
1litre alcohol (95%bv,I think)
15g star anise
25g coriander seed
25g juniper berries
25g red sandalwood
20g sweet flag (acorus calamus)
1 whole nutmeg
zest from a lemon
Crush spices. Macerate spices and lemon zest in alcohol for 6 weeks.
Group 2 ingredients:
1 kg roasted and ground barley
6 espresso cups (demitasse) of Italian coffee
Boil the barley in 4litres of water. Cool and let stand for 2 days.
Filter. Heat the liquid and dissolve sugar. Add coffee. Allow to cool.
Combine with the alcohol infusion. Allow to age. Decant carefully
