So you have added some acid to your wash to make the pH drop. You need a base to add to you wash to bring the pH up. Assuming you are going to distill it, a pH between 3.0 and 3.3 is recommended for wine.
You can use any of the following.
Potassium biCarbonate or
Sodium bi carbonate.
I recommend using the potassium bicarbonate.
