- Fennel is a popular flavoring for Italian grappas. Often green tops
are used, but the seeds would give a licorice/aniseed flavor which
would be suitable for a 'Sambuca' type liquor. According to one site,
the essential oil yield is 4-6%, therefore 2000 g would give you
about 80 ml or 16 tsp of essential oil. Apparently you need about 1/2
tsp/1 litre of alcohol for flavoring. See Tony's site for recipes.
