- Green walnuts are full of tannins, but there is a recipe from Naples that adds quinine. A tsp. of oak is not much as for wine - the usual amount is 5g/litre.

I didn't say this before, when talking about Nocino, but my last lot , when I bottled it in 750 ml beer bottles with beer caps, I bought some oak chips from a local brew shop put about a teaspoon of them in with it.
