Cinchona is a genus of about 25 species the bark of which is the
source of the bitter anti-malarial drug quinine.
Vin de quinquina (1890, France)
25g powdered red cinchona bark (Cinchona pubescens)
100ml neutral alcohol (60%abv)
1 litre red or white wine
Macerate the quinine powder in the alcohol for 24 hours in a sealed
jar. Add the wine and macerate for 2 weeks. Strain and filter.
Cordial Elixir of Calisaya (1859, U.S.)
60g cinchona bark
30g fresh orange peel
15g cinnamon bark
15g coriander seed
5g fennel seed
5g caraway seed
5g cardamom seed
5g cochineal coloring
1 litre alcohol (60%abv)
1 litre water
2 cups sugar (1 cup sugar/litre)
Macerate the ingredients in the alcohol. Strain and filter. Make a
sugar syrup and when cool add to the alcohol.
