- Its white powder mold. Ive had it on beer wine and mash. It can make a beer taste sour if left long enough. It comes from not steralizing your fermentor, or leaving a finished ferment too long. Dont worry about leaving a mash to clear toolong. Skim the mold off and run the mash. Study cleaning and steralizing beer equipment . Dont be in and out of the fermentor till your ready to run it. Steralize anything you stick in the mash.
