      Twelve Herbs Bitters/Amaro 12

      Melissa (lemon balm) - 5 leaves
      Sage - 5 leaves
      Rosemary - 10 leaves
      Centaury - 1 blossom
      Juniper - 15 berries
      Cloves - 5 whole
      Cinnamon stick - 12 mm piece
      Orris root - pinch
      Sweet Flag (Calamus acorus) - pinch
      Gentian - pinch of root
      Thistle - pinch dessicated root
      Bay leaves - 2 whole
      Sugar - 180 g
      Dry white vermouth - 780 ml
      Alcohol (95%bv) - 240 ml

      Macerate all the botanicals with the alcohol in a sealed glass jar for
      5 days. Dissolve sugar in the vermouth and add to jar. Macerate for 5
      more days. Strain. Age for 8 months.
