      Green Grape/Uviolo

      Grapes (green & tart) - about 625 g (enough to make 500 ml juice)
      Cloves - 4 whole
      Coriander - 1 tbsp. seeds
      Cinnamon stick - 12 mm piece
      Brandy - 480 ml
      Sugar - 120 g
      Alcohol (95%bv) - 120 ml

      Macerate cloves, cinnamon and coriander with the alcohol in a sealed
      glass jar for 2 weeks. Heat grapes over low heat while stirring until
      skins pop open. Put in sieve and extract juice. Dissolve sugar in warm
      juice and add to jar. Macerate for 5 more weeks. Strain. Age for 9 months.
