      Quince/Cotognolo

      Quince (ripe) - 1/2 cup peel
      Sugar - 300 g
      Brandy - 390 ml
      Alcohol (95%bv) - 180 ml
      Water - 180 ml

      Place peel, brandy and alcohol in a sealed glass jar and macerate for
      6 weeks. Make a sugar syrup and when cool add to jar. Allow to stand
      for 1 week. Strain. Age for 6 months.
